Oatmeal Cookies



Shannon and I had fun making my mother's oatmeal cookies. The recipe's below - I found it again on Cooks.com
Oatmeal Cookies

3/4 cup of shortening (Crisco-type)

1 cup firmly-packed brown sugar

1/2 cup granulated sugar (I substituted Splenda, to cut down on the calories)

1 egg

1/4 cup water

1 teaspoon vanilla

3 cups oatmeal

1 cup flour

1 teaspoon salt

1/2 teaspoon baking soda (NOT powder)

Cream the shortening and the sugars together until thoroughly mixed. Add egg, water, and vanilla, and stir together.

Add dry ingredients - it's better to mix the flour, salt, and baking soda before adding to rest of mix.

Bake at 350 degrees on a greased baking sheet for 12-15 minutes. Cookies will still be a little soft, but will firm up on cooling.
